Chef Eyad Algiers is a single restaurant and the brand's first site in North Africa. Opening here was a test of whether the format would travel west of the Levant, and the queue outside answered it. The kitchen holds to the same overnight smoke and the same core cuts, but portioning is adapted to how Algerian tables eat: more sharing platters, fewer single plates.
