It was a deliberate test of whether a Gulf-Levant smokehouse format would travel west, and the answer arrived in the queue outside. The kitchen runs the same overnight smoke and the same core cuts, with portioning adapted to how Algerian tables actually eat: more sharing platters, fewer single plates.
