Chef Eyad in Zarqa

Chef Eyad Zarqa is a single restaurant serving Jordan's second city. Zarqa trades differently from Amman — earlier peaks, more takeaway, larger family orders — and the kitchen plans its smoke schedule around that, finishing the brisket earlier in the day. The menu is the standard Chef Eyad board of beef brisket, short rib, smoked lamb and chicken, with sharing platters sized for a table rather than a plate.
